Ingredients (4 people):
-1 pack of El Dulze Choi Sum
-8 mini corn cobs
-1 litre of vegetable stock
-1 jar of coconut milk
-2 tablespoons of Thai green curry
-The juice of a lime
-12 shrimps
-3 shiitake or portobello mushrooms
-1 large carrot
-100 g of green beans
-100 g of snow peas (optional)
-8 small spring onions
-Rice noodles
-Salt and olive oil
Method:
Peel the prawns, wash and chop the vegetables into uniform pieces.
Cook the rice noodles.
Boil the spring onions, beans, Choi Sum, corn and snow peas in salt and water. Set aside.
Add a little oil to a frying pan, sauté the prawns then set them aside. Then sauté the shiitake and set them aside also.
Bring the broth to the boil, add the curry, the lime juice and just before you take it off the heat, add the coconut milk.
Serve each guest a bowl with a helping of noodles, a helping of vegetables and prawns and then pour the soup over them.
